Pumpkin Pie Smoothie with Parsley Protein Powder

At Parsley right now the entire team is shamelessly and unapologetically eating any and all varieties of this season’s vitamin-DENSE veg in just about any shape, form, meal. Sure, moderation is key, but we don’t feel too bad about our recent “heightened” pumpkin intake, because, well: carotenoids (vitamin A) ; antioxidants; Potassium, Magnesium, Vitamin B5, C and E; and fiber . To name only a few reasons.

You’ve heard us talk about Plant Based Paleo before. We aim to include good quality sources of protein with every meal, which is not exactly always easily achievable. Especially for the busy, health-conscious human with limited day or night time for endless meal prep.

Today we bring you the – you guessed it! – pumpkin pie smoothie version of the Parsley Breakfast Shake. Some of us on the team, may or may not have also had this for lunch, afternoon snack and a weekend dessert several times this season. Whatever works for you 😉

Pumpkin Pie Smoothie

Makes 2:

  • 1 cup cooked pumpkin, steamed or organic canned
  • 2 heaped scoops of Parsley Protein Powder (vanilla)
  • 1/4 cup walnuts (preferably soaked overnight + rinsed)
  • 1/4 cup pepitas (preferably soaked overnight + rinsed)
  • 1.5 cups filtered water or unsweetened Almond MIlk
  • 1 Tbsp. coconut butter
  • Few cubes of ice
  • Few shakes of cinnamon (1/4 tsp)

Blend all ingredients until well combined. Enjoy!
