Recipe: Our Favorite Anti-Inflammatory Salad Dressing

Summer calls for fresh raw salads, which means I’m breaking out my pesto dressing! It’s a crowd pleaser— you won’t find a single leaf untouched. Not only is the flavor a winner, pesto is nutrient dense. It contains basil, an anti-inflammatory herb from the mint family. Basil includes antioxidant dense essential oils to protect the liver, and support the overall immune system. It is also an antimicrobial for all of you struggling with candida or gut dysbiosis.

Ingredients

Pesto Dressing:
  • 1 lemon, squeezed
  • 1 garlic clove
  • 1/2 cup olive oil
  • 3 tablespoons sunflower seeds
  • 1 cup of packed basil
  • 1 teaspoon maple syrup
  • 1/2 teaspoon salt

Directions

Place ingredients in a food processor and blend. Dress salads or enjoy over white fish or chicken!
