Recipe: Our Favorite Anti-Inflammatory Salad Dressing

Summer calls for fresh raw salads, which means I’m breaking out my pesto dressing! It’s a crowd pleaser— you won’t find a single leaf untouched. Not only is the flavor a winner, pesto is nutrient dense. It contains basil, an anti-inflammatory herb from the mint family. Basil includes antioxidant dense essential oils to protect the liver, and support the overall immune system . It is also an antimicrobial for all of you struggling with candida or gut dysbiosis .

Ingredients

Pesto Dressing:

  • 1 lemon, squeezed

  • 1 garlic clove

  • 1/2 cup olive oil

  • 3 tablespoons sunflower seeds

  • 1 cup of packed basil

  • 1 teaspoon maple syrup

  • 1/2 teaspoon salt

Directions

Place ingredients in a food processor and blend. Dress salads or enjoy over white fish or chicken!
