Healthy Fats & Lean Protein: A Nutrient Packed Lunch Bowl

Are you tired of eating the same lunch from the same deli every single day? Ditch the boring salad for this warming, filling and healthy lunch bowl recipe.

The Nourish Bowl, one of the delicious lunch options from our 7 Day Detox program, is a Parsley Health favorite. You can prepare most of the ingredients in bigger batches beforehand for a few days of delicious lunches tossed in a bowl. Just poach a salmon fillet and add it at the last minute.

Ingredients:

  • ½ cup cooked brown rice
  • ½ cup steamed Brussel sprouts
  • 1 handful cooked roasted carrots
  • 1 handful chopped red onion
  • 1 tbs. organic hummus
  • 1 poached salmon fillet

Dressing:

  • 1 tbs. extra virgin olive oil
  • 1 tbs. lemon juice
  • 1 tsp. apple cider vinegar
  • Pink sea salt + Pepper as desired

INSTRUCTIONS:

Cook brown rice for the base of the bowl. Steam Brussel sprouts, roast carrots and add on top of the rice. Add chopped onion and a spoon of hummus. Poach salmon fillet and top the bowl. Mix dressing ingredients in a separate jar and drizzle over!
