‘Nutritious and delicious healthy dinner ideas’ is still one of our favorite word combinations of all time. It’s a subject we cannot get enough of or stop talking about. Sorry (significant others), not sorry (Parsley members).

Summer ’16 is in full swing and we have every intention of having all of the fun and none of the fatigue . We want easy-to-make plant based, gluten free dinners that have enough protein and good-for-you fats in them.

Turns out it’s not too much to ask. Here are 5 amazingly delicious quick and easy recipes to make in minutes, every night, all summer.

1. Spring onion chickpea falafels with millet (or quinoa).

If you think this delicious, crispy take-away food can’t be replicated at home, think again. They’re easier to make than you think and are perfect for throwing on salads, stuffing into corn tortillas or rommaine lettuce wraps, or eating as is, with nothing but a sweet summer cocktail . Get the recipe on The First Mess .

2. Almond and Herb crusted baked salmon & Asparagus.

So fast (15 mins), so paleo , so full of omega-3 (the antidote to sugar ) , and so low FODMAP if you swap the asparagus for tomatoes and sautéed spinach. Get it on A Saucy Kitchen .

3. Fijian Ceviche (Kokoda)

Kodoka is Figi’s version of ceviche and contains coconut milk. If your mouth isn’t watering yet you need a check-up from the neck-up. Saveur has the recipe . Thank us later.

4. Zucchini Pasta with Poached eggs and cherry tomato basil sauce

Save on cooking time and carbohydrate intake with this all-day, any-meal raw zughetti (if that’s not a word yet it should be) that is very easy to slam together and also beautiful enough for instagram (#parsleylife). High five Half Baked Harvest .

5. Thai Soba Noodles Recipe With Peanut Sauce

This dream dish from The Edgy Veg  is another pasta-like option, but still low-carb and gluten-free. It made the list for fitting the usual Parsley healthy dinner ideas criteria and has the added bonus of being super versatile – eat it hot or cold and add anything to it: chicken, carrots, red cabbage, cashews, salmon, you name it.

Who’s hungry? Let’s meet and eat.
