‘Nutritious and delicious healthy dinner ideas’ is still one of our favorite word combinations of all time. It’s a subject we cannot get enough of or stop talking about. Sorry (significant others), not sorry (Parsley members).

Summer ’16 is in full swing and we have every intention of having all of the fun and none of the fatigue . We want easy-to-make plant based, gluten free dinners that have enough protein and good-for-you fats in them.

Turns out it’s not too much to ask. Here are 5 amazingly delicious quick and easy recipes to make in minutes, every night, all summer.

1. Spring onion chickpea falafels with millet (or quinoa).

If you think this delicious, crispy take-away food can’t be replicated at home, think again. They’re easier to make than you think and are perfect for throwing on salads, stuffing into corn tortillas or rommaine lettuce wraps, or eating as is, with nothing but a sweet summer cocktail . 2. Almond and Herb crusted baked salmon & Asparagus.
